Both Bartleby & Fitzgerald looked like they were very good boys. Thanks for sharing the recipe, and cheers!

My state (Utah) does not stock Cynar in its liquor stores so I'm always jealous when you bust it out

I wish I had a better way to deal with control state restrictions.

In this case, however, I can say that almost any amaro or Italian-bitter-style liqueur will work in this slot. So whatever you can find with a bitter kick should work well enough here, even if it's not precisely the same flavor profile.

Peter,

After hearing about Cynar over and over and OVER, I finally caved an bought a bottle. I'm only sorry I waited as long as I did. GOOD STUFF. Thanks for mentioning it so much.

Also - I'm sorry to hear about your dogs. :( Dogs are awesome.

Glad I’m winning converts to the Cynar cult.

Thanks about the dogs. Fitzgerald passed a couple years ago, and Bartleby some years before that, so they are old fond memories at this point. I have a new pair of very good, very large bullmastiffs to take care of me now.

Would you use your Demerrara syrup here?

It wouldn’t be my very first choice. But it should work pretty well in this structure, albeit with a slightly richer profile in this end.

I didn’t have any simple syrup readily available so I subbed in honey syrup (and Hendricks instead of Tanqueray) - it was pretty fantastic.

I gave this one a shot last night - I thought it was solid but on the sweet side. I have to admit that my bottle of Cynar has been sitting in the fridge for quite awhile, so that may be part of the issue.

Anyway, I’d be interested in how this works with a bit less sugar (I used a full oz of 1:1 simple, so I’d cut to 0.75 oz) and maybe with a fresh bottle of Cynar.
