Cherry Heering is a frustrating ingredient—big, heavy bottle that takes up so much space for this or the occasional Singapore Sling. I wish some company offered an assortment of mini bottles of stuff like Heering or creme de violette that are unique but only come up sparsely....

Relatively early in my cocktail making days — maybe 6-7 years ago — I ordered several bottles since I couldn’t find it at any of the local stores. (This has since changed.) I still have the same bottles. It’s not an every day, or even every six months, ingredient.

Check the Little Devil recipe I just posted above if you want something else to do with the bottle.

Smugglers cove has an interesting Tiki with ye olde Heering: Merciless Virgin. Not my favorite but it is at least an novel place to expend some Heering.

Also I have been cursing VA ABC laws for not being able to import booze and I imagine part of the reason for no weird mini’s is the crazy world of liquor laws.

Oof. First “nope” of the newsletter. I think I want to use the Monkey Shoulder on other drinks. Scotch section soon? Also, you have to point me to a good drink that uses the Heering since I own a bottle now :)

Like I said: Not for everyone! I don’t have a ton of Heering drinks in my notebook, but since you asked, here’s one that isn’t going to be quite so polarizing. (I may write this up in the future.)

THE LITTLE DEVIL

Skylark, NYC

1 1/2 oz ancho reyes

1/2 oz vida mezcal

1/2 oz Espolon reposado tequila (calls for anejo)

3/4 oz cherry heering

3/4 oz lime juice

1/4 oz agave syrup

Shake and strain over a large ice cube

On a more positive note, we have an orange tree in our yard that we hardly use because of the acidity of whatever strain of orange it is. After running it through a coffee filter, the juice was much better. It might graduate from a garnish and zest tree into something more useful. I'll have to figure out how to scale up the clarification process.
