While not a new subscriber, I recently also got my first bottle of Cynar and then went to the newsletter archives for inspiration. In addition to the Little Italy, I also love The Bartleby. If you like gin, I found The Bartleby to be a great gateway, Cynar cocktail. The connection with one of Peter's dogs was a Bartleby Bonus.
A drink I didn’t mention here, but should have, is The Getaway, from The Columbia Room in DC. It was originally/informally known as the Cynar Daiquiri. The earliest versions used regular Cynar, but by 2016 or so, the bar had updated the drink to add saline — and use Cynar 70. For me the mezcal Too Soon (just finished one) is the highest and best use of Cynar.
